A bariatric gelatin recipe for weight loss is a sugar-free, high-protein dessert designed for post-weight-loss surgery patients and anyone following a protein-focused diet.

  • Total Time: 4 hours
  • Yield: 6 servings 1x

Ingredients

Scale
  • 2 tablespoons unflavored gelatin, about 2 packets
  • 1 cup boiling water
  • 1 cup ice-cold water
  • 1 scoop vanilla protein powder, about 25g
  • 1 teaspoon sugar-free vanilla extract
  • 23 tablespoons sugar-free sweetener
  • 1/2 cup heavy whipping cream
  • 1/4 teaspoon sea salt

Instructions

  1. Boil 1 cup of water in a small saucepan until it reaches a rolling boil.
  2. Add the unflavored gelatin directly to the boiling water while stirring constantly.
  3. Continue stirring for about 1 minute until all gelatin granules fully dissolve.
  4. Remove from heat and allow the mixture to cool slightly.
  5. Whisk the vanilla protein powder into the warm gelatin mixture until completely smooth and lump-free.
  6. Add the sugar-free vanilla extract.
  7. Stir in 2 to 3 tablespoons of sugar-free sweetener, adjusting to taste.
  8. Add the sea salt and stir to balance the flavors.
  9. Pour in 1 cup of ice-cold water while stirring gently but constantly.
  10. Transfer the mixture to the refrigerator and chill for about 30 minutes until it begins to thicken slightly.
  11. Remove the partially set gelatin mixture from the refrigerator.
  12. Whip the heavy whipping cream to soft peaks using an electric mixer or whisk.
  13. Gently fold the whipped cream into the gelatin mixture with a spatula, being careful not to deflate the cream.
  14. Spoon the mixture into individual serving bowls or ramekins.
  15. Cover and refrigerate for at least 3 1/2 hours until completely set and firm.
  16. Serve chilled when the gelatin jiggles slightly but holds its shape.

Notes

Let the gelatin mixture cool slightly before adding protein powder to prevent clumps. Use ice-cold water for quicker setting, fold the whipped cream gently, and never reheat the finished gelatin because heat destroys the set texture.
