Ingredients

8 oz spaghetti or rice noodles
1/2 cup peanut butter
2 tbsp tahini
3 tbsp rice vinegar
1 tbsp soy sauce
1 tbsp sesame oil
1 tbsp chili oil
1 tbsp honey
2 cloves garlic, minced
1 tsp grated ginger
1/4 cup lime juice
1 cup shredded carrots
1 cup chopped cucumber
2 green onions, sliced
1/4 cup chopped cilantro
1/2 cup crushed roasted peanuts
Optional: cooked tofu or grilled chicken

Instructions

Cook noodles according to package instructions; cool completely.
In a bowl, whisk peanut butter, tahini, rice vinegar, soy sauce, sesame oil, chili oil, honey, garlic, ginger, and lime juice to create a thick dressing.
Add cooled noodles to dressing; toss until evenly coated.
Stir in shredded carrots, cucumber, green onions, and cilantro.
Top with crushed peanuts and serve chilled.
