Ingredients
2 cups rolled oats
2 large apples, peeled and diced
1 cup milk
2 large eggs
1/3 cup brown sugar
1/4 cup maple syrup
1/2 cup unsalted butter, melted
1 teaspoon baking powder
1 teaspoon vanilla extract
1 1/2 teaspoons ground cinnamon
1/4 teaspoon salt
1/4 teaspoon nutmeg
Pinch of additional cinnamon for topping
Instructions
Preheat oven to 375°F (190°C). Grease an 8×8-inch baking dish.
In a large bowl, whisk oats, baking powder, cinnamon, salt, and nutmeg.
In a separate bowl, mix milk, eggs, brown sugar, maple syrup, and melted butter.
Combine wet and dry ingredients, stirring until just blended.
Fold in diced apples gently.
Pour mixture into prepared baking dish.
Bake for 35 minutes until golden and a toothpick comes out clean.
Let cool slightly, then slice into six rectangles.
Notes
Use Granny Smith or Honeycrisp apples for best texture.
For extra crunch, sprinkle oats on top before baking.
Store cooled leftovers in an airtight container in the fridge for up to 3 days.
