Instructions
- Combine ground chicken breast, shredded cabbage, green onions, minced garlic, and minced ginger in a medium mixing bowl.
- Add low-sodium soy sauce, toasted sesame oil, and water to the chicken mixture.
- Mix thoroughly using your hands or a wooden spoon until completely combined.
- Taste the filling and adjust seasonings if desired.
- Fill a shallow bowl with room-temperature water.
- Quickly dip one rice paper wrapper into the water for about 2 seconds until pliable.
- Place the softened wrapper on a clean work surface.
- Position about 2 tablespoons of filling in the center.
- Fold the bottom edge over the filling.
- Fold in the sides.
- Roll tightly toward the top edge.
- Repeat with the remaining wrappers and filling until you have 16 lumpia rolls.
- Preheat your air fryer to 380°F for about 5 minutes.
- Lightly spray the air fryer basket with cooking oil.
- Place the lumpia rolls seam-side down in a single layer inside the basket.
- Spray the tops of the lumpia rolls with a light coating of cooking oil.
- Air-fry at 380°F for exactly 12 minutes.
- Shake the basket halfway through cooking.
- Remove when the lumpia rolls are golden brown and crispy on all sides.
- Transfer to a serving plate.
- Cool for 2 minutes before serving warm and crispy.
Notes
Squeeze excess moisture from the shredded cabbage before mixing the filling to prevent soggy rolls. Dip rice paper wrappers for only 2 seconds, roll tightly with no air pockets, and avoid overcrowding the air fryer basket for the crispiest results.
