Ingredients
1 large head green cabbage (about 2 lbs)
2 tablespoons olive oil
2 cloves garlic, minced
1 tablespoon apple cider vinegar
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon ground coriander
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon honey or maple syrup
Instructions
Heat olive oil in a large skillet over medium heat.
Core the cabbage and cut into 1/2-inch wide wedges.
Add garlic to the skillet and sauté for 1 minute until fragrant.
Add cabbage wedges to the skillet and cook for 3-4 minutes on each side, until golden and slightly caramelized.
Sprinkle with cumin, paprika, coriander, salt, and pepper.
Pour in apple cider vinegar and honey, stirring until the cabbage is evenly coated and slightly sticky.
Cover and cook for 5-7 minutes, stirring occasionally, until tender.
Uncover, cook for an additional 3-4 minutes to crisp the edges, then serve immediately.
Notes
For extra crispiness, pat the cabbage dry before cooking.
You can substitute the honey with agave nectar or another sweetener of your choice.
Leftover cabbage should be stored in an airtight container in the refrigerator and reheated in a skillet for best results.
