  • 2 cups (480ml) 100% pure unsweetened fruit juice
  • 1 1/2 cups (200g) fresh berries

Instructions

  1. Pour 1/4 cup of the fruit juice into a small bowl and sprinkle the unflavored gelatin evenly over the top.
  2. Allow the gelatin to bloom for 2 minutes, until it develops a spongy texture.
  3. Pour the remaining fruit juice into a medium saucepan and heat over medium heat until steaming but not boiling.
  4. Add the bloomed gelatin to the hot juice and stir constantly for about 3 minutes, until completely dissolved and clear.
  5. Allow the gelatin mixture to cool at room temperature for approximately 15 minutes.
  6. Add 1 cup of the fresh berries to the gelatin mixture and pulse briefly in a blender until the berries are partially broken down but still visible.
  7. Divide the berry-gelatin mixture evenly among four ramekins, small jars, or individual serving dishes.
  8. Top each serving evenly with the remaining fresh berries.
