- 2 tablespoons (about 14g) unflavored gelatin powder
- 2 cups (480ml) 100% pure unsweetened fruit juice
- 1 1/2 cups (200g) fresh berries
Instructions
- Pour 1/4 cup of the fruit juice into a small bowl and sprinkle the unflavored gelatin evenly over the top.
- Allow the gelatin to bloom for 2 minutes, until it develops a spongy texture.
- Pour the remaining fruit juice into a medium saucepan and heat over medium heat until steaming but not boiling.
- Add the bloomed gelatin to the hot juice and stir constantly for about 3 minutes, until completely dissolved and clear.
- Allow the gelatin mixture to cool at room temperature for approximately 15 minutes.
- Add 1 cup of the fresh berries to the gelatin mixture and pulse briefly in a blender until the berries are partially broken down but still visible.
- Divide the berry-gelatin mixture evenly among four ramekins, small jars, or individual serving dishes.
- Top each serving evenly with the remaining fresh berries.
- Place the servings on a level refrigerator shelf and chill for at least 4 hours, until completely firm and set.
- Serve directly in the dishes, or carefully unmold onto plates before serving.
Notes
Use pure unflavored gelatin and 100% fruit juice with no added sugar. Allow the gelatin to bloom fully before dissolving, and chill for the full 4 hours for the best firm texture. Store covered in the refrigerator for up to 5 days.
